  • Rabbit 2 pieces
  • Olive Oil 5 fl oz
  • Lemon 2 pieces
  • Garlic 4 heads
  • Dry White Wine 5 fl oz
  • Potato 0 lbs
  • Salt to taste

Step-by-Step Guide

Step 1

Cut the rabbit into pieces: the best parts are the hind legs, which can be carefully separated, while the rest of the body can be chopped into roughly equal portions.

Step 2

Mix olive oil with a generous pinch of salt and pepper, lemon juice, and a large amount of thyme. Add the rabbit to this mixture and let it marinate for three hours.

Step 3

After three hours, transfer the rabbit to a baking tray (preferably to two trays, as it may not fit on one), sprinkle with slices of raw salted potatoes and whole garlic cloves, and place in an oven preheated to 355°F for forty minutes.

Step 4

Ten minutes before the end, pour dry wine into the baking dish, increase the temperature to 390°F, and keep the rabbit and potatoes in the oven until fully cooked. Serve drizzled with the pan juices.
