- Quinoa 5 oz
- Apricots 10 pieces
- Lemon Zest 1 tablespoon
- Lemon Juice 1 tablespoon
- Olive Oil 2 tablespoons
- Chopped Parsley ¼ cup
- Mint ¼ cup
- Toasted Pine Nuts 0 oz
Step-by-Step Guide
Step 1
Cook the quinoa according to the package instructions. Drain any excess liquid. Soak the dried apricots in hot water in a bowl to plump them up.
Step 2
Place the cooked quinoa in a deep plate, add the lemon zest, lemon juice, olive oil, and season to taste. Mix well.
Step 3
Drain the water from the apricots, and chop them into large pieces. Add the apricots to the quinoa. Mix everything together. Top with pine nuts and greens.
