Quinoa Pilaf with Young Peas and Green Garlic

Ingredients

  • Quinoa 3 cups
  • Green Peas 5 oz
  • Salt to taste
  • Ground Black Pepper to taste
  • Extra virgin olive oil 2 tablespoons
  • White Part of Leek 1 piece
  • Garlic 1 head
  • Fresh Mint 1 tablespoon
  • Green onions to taste
  • Parsley 0 oz

Step-by-Step Guide

Step 1

Bring lightly salted water to a boil and add the peas. Reduce the heat and cook for 4-10 minutes until the peas are tender.

Step 2

Drain most of the water, leaving 2 cups in the pot. Bring to a boil again, season with salt to taste, and add the quinoa. When the water boils, reduce the heat, cover, and cook for 15 minutes until the quinoa is tender.

Step 3

Drain the water, cover with a clean towel and lid, and let sit for 15 minutes.

Step 4

Heat 1 tablespoon of olive oil in a large skillet, add the leek and garlic, season with salt, and cook for 3-5 minutes until softened, stirring occasionally.

Step 5

Add the quinoa and peas, and mix with the remaining olive oil, cooking for another 2 minutes, stirring gently to avoid mashing the peas. Add the herbs, pepper, and serve.
