
Quinoa Pilaf with Mushrooms

Description
Although this dish is known as pilaf in international cuisine, it is prepared more like Italian risotto. It is better to make a salty broth than to salt the grains themselves. If the broth evaporates quickly, don't hesitate to add more broth or water to the plate.
Ingredients
- Quinoa 20 oz
- Olive Oil 0 fl oz
- Garlic 3 cloves
- Champignons 5 oz
- Parsley ½ bunches
- Spanish onions 1 head
- Chicken Broth 15 fl oz
Step-by-Step Guide
Step 1
Sauté the finely chopped mushrooms in olive oil until they release a distinct mushroom aroma. Add the onion and cook until it becomes soft but has not started to brown.
Step 2
Add the quinoa and finely chopped garlic to the onions and mushrooms, and sauté for a couple of minutes.
Step 3
Pour in the broth and cook for about fifteen minutes, stirring constantly. Just before the end of cooking, add the chopped parsley. As a nod to the grain's South American origin, you can also add sliced chili peppers.
