Quinoa and Broccoli Casserole
Ingredients
- Quinoa 2½ cups
- Vegetable Broth 4½ cups
- Pesto 2 tablespoons
- Salt a pinch
- Cornstarch 2 teaspoons
- Fresh Spinach Leaves 2 cups
- Mozzarella Cheese 10 oz
- Broccoli 10 oz
- Green onions 5 oz
Step-by-Step Guide
Step 1
Place the broccoli in a bowl and heat in the microwave for 3 to 4 minutes on high.
Step 2
Mix the pesto with the broth, cornstarch, and salt. Bring the mixture to a boil.
Step 3
In a baking dish, layer the quinoa, spinach leaves, green onions, and 200 g of mozzarella. Pour the broth over everything and bake for 30 to 35 minutes in a preheated oven at 355°F.
Step 4
Add the broccoli, remaining mozzarella, and cook for another 5 to 7 minutes until the cheese is completely melted. Optionally, sprinkle the warm casserole with Parmesan before serving.
