
Quick Paella with Sausage and Seafood

Description
Instead of mussels, you can use any small shellfish. The rice should be specially processed and requires no more than 8-10 minutes to cook. Frozen bell pepper can be used instead of fresh.
Ingredients
- Olive Oil 3 tablespoons
- Garlic 3 cloves
- Onion 1 head
- Homemade Chicken Sausage 20 oz
- Orange Bell Peppers 1 piece
- Long-Grain Rice 2 cups
- Dry White Wine ¼ cup
- Chicken Broth 10 fl oz
- Peeled Cooked Shrimp 20 pieces
- Saffron 0.1 teaspoons
- Mussels 20 oz
- Frozen green bean pods 1 cup
- Olives stuffed with lemon 1 cup
Step-by-Step Guide
Step 1
Cut the sausage into cubes, chop the garlic and onion. Remove seeds from the bell pepper and finely chop.
Step 2
In a large deep skillet with hot oil, sauté the chopped garlic, onion, and bell pepper for 2-3 minutes.
Step 3
Add the sausage to the skillet and fry until lightly browned (about 2 minutes).
Step 4
Add the quick-cooking rice, wine, broth, saffron, and shrimp. Cover and cook on high heat until most of the liquid is absorbed by the rice (about 6 minutes).
Step 5
Add the mussels, peas, and olives, and cook for another 3-4 minutes until the mussels open.
Step 6
Remove from heat, discard any unopened shells, and let sit covered for about 5 minutes until the rice absorbs all the liquid.
Step 7
Serve directly from the skillet.
