Main Dishes • European
Description
Recipe by John Smith, chef at a local American restaurant.
Ingredients
- Mackerel 2 pieces
- Garlic 2 cloves
- Vegetable Oil 2 spoons
- Lemon ½ pieces
- Parsley 1 bunch
- Dill 1 bunch
- Cilantro 1 bunch
- Green peppercorns 1 tablespoon
- Salt to taste
Step-by-Step Guide
Step 1
Wash the fish, remove the gills and entrails if present.
Step 2
Rinse the fish once more inside and out, then pat it dry with paper towels.
Step 3
Thinly slice 1 clove of garlic and set it aside.
Step 4
Place the second clove in a mortar, add a large pinch of salt, whole peppercorns, and grind everything together into a paste.
Step 5
Squeeze lemon juice into the resulting paste, add vegetable oil, and mix well.
Step 6
Place the fish on a piece of foil folded in half (large enough to wrap the fish completely), and rub garlic paste both inside and out.
Step 7
Chop about a third of the herbs, add the chopped garlic, and place them inside the cavity of the fish.
Step 8
Cover the fish with the remaining herbs and place the squeezed half of the lemon inside as well.
Step 9
Carefully wrap the fish in foil and place it in a preheated oven at 355°F for 25 to 30 minutes.
Step 10
Remove the fish from the oven; carefully, to avoid burning yourself, unwrap the foil, remove the herbs, and using a fork to lift from the back, take off the entire fillet. Similarly, separate the second fillet.
Step 11
Serve the fish with boiled potatoes and homemade pickles.
