Quick Grilled Ratatouille

Ingredients

  • Eggplants 1 piece
  • Courgette 2 pieces
  • Spanish onions 1 head
  • Tomatoes 2 pieces
  • Orange Bell Peppers 2 pieces
  • Olive Oil 2 tablespoons
  • Garlic 1 clove
  • Fresh basil leaves to taste
  • Coarse Salt to taste
  • Ground Black Pepper to taste

Step-by-Step Guide

Step 1

Preheat the grill.

Step 2

Lay thin slices of eggplant on a sheet of foil, top with chopped green onion, then thinly sliced zucchini and round slices of bell pepper. Finally, layer the round slices of tomatoes on top.

Step 3

Mix olive oil, minced garlic, salt, and pepper, and drizzle over the vegetables.

Step 4

Fold the edges of the foil tightly to create an envelope and place it on the grill. Cook for 30 minutes, turning once. Unwrap and sprinkle with basil leaves.
