Description

You can use either a whole chicken or cut pieces, whichever is more convenient. The cooking time depends on the weight of the chicken. For a 1 kg chicken at 180 degrees Celsius, it takes about 20 minutes (give or take 3 minutes). You can use a microwave or an open flame instead of an oven. This marinade is also great for fish (marinating time can be reduced to 30 - 45 minutes) and for meat, but then it should be cooked on an open grill.

Ingredients

  • Apple Cider Vinegar 5 oz
  • Poultry 0 lbs
  • Water 5 fl oz
  • Fennel 0 oz
  • Ground Black Pepper to taste
  • Red Long Chili Peppers to taste
  • Herbamare Spicy Seasoning 2 teaspoons
  • Chinese Five Spice 2 teaspoons
  • Vegetable Oil 0 fl oz
  • Herbes de Provence 3 teaspoons

Step-by-Step Guide

Step 1

Wash the chicken and remove all offal.

Step 2

In a pot, mix all the marinade ingredients: vinegar, water, fennel, peppers, spices, and seasonings.

Step 3

Place the chicken in the marinade under a weight. The marinade should completely cover the chicken. If there isn't enough marinade, you can add boiled water and apple cider vinegar in equal proportions.

Step 4

Marinate for at least 3 hours at room temperature.

Step 5

Preheat the oven to 355°F.

Step 6

Grease a baking sheet with vegetable oil.

Step 7

Place the chicken on the sheet and bake in the oven at 355°F for 20 minutes.

Step 8

After 20 minutes, remove the chicken and check for doneness. If the meat is still raw, reduce the temperature to 320°F and continue cooking until done.

Step 9

It is best served with boiled rice or mashed potatoes.
