Quiche with Salmon and Camembert
Ingredients
- Wheat Flour 1½ cups
- Butter 5 oz
- Smoked haddock fillet 5 oz
- Salt to taste
- Ground Black Pepper to taste
- Leek 5 oz
- Camembert cheese 5 oz
- Cream 5 fl oz
- Farm fresh eggs 2 pieces
- Dill 2 sprigs
Step-by-Step Guide
Step 1
Preheat the oven to 355°F.
Step 2
Pour the flour into a small bowl, add salt and cut butter into pieces. Mix the ingredients with your hands until smooth.
Step 3
Add 6–7 tablespoons of water to the dough, mix, and roll it out into a thin layer on a floured surface.
Step 4
Place the dough in a mold (3 cm deep and about 20 cm in diameter). Press the dough to the bottom and sides, trimming any excess from the edges. Bake in the oven for 10 minutes.
Step 5
Melt the butter in a small skillet and sauté the leek for 5 minutes. The leek should become soft but not brown. Pour in part of the cream and simmer the leek a little. Spread a layer of leek in the mold on the dough. On top of the leek, layer thinly sliced salmon. Sprinkle the filling with finely chopped dill.
Step 6
Beat the eggs and cream together, add salt and pepper. Pour the mixture over the pie, slice the Camembert into thin wedges and place on top of the pie, then put it in the oven.
Step 7
Bake for another 25–30 minutes until golden brown. Allow to cool slightly, remove from the mold, cut into triangles, and serve with a green salad.
