Ingredients

  • Wheat Flour 5 oz
  • Butter 5 oz
  • Farm fresh eggs 2 pieces
  • Whole egg 1 piece
  • Powdered Sugar 1 teaspoon
  • Cream 10 fl oz
  • Citrus Zest Mix 1 teaspoon
  • Scallions 1 bunch
  • Smoked haddock fillet 20 oz
  • Dill 1 tablespoon

Step-by-Step Guide

Step 1

Cut the butter into pieces and mix with the flour and powdered sugar. Add 1-2 tablespoons of water. Knead well until the dough is smooth. Add more water if necessary. Form into a ball, wrap in plastic wrap, and refrigerate for 15 minutes.

Step 2

Roll out the dough between 2 sheets of parchment paper to the size of the tart pan. Place it in the pan and trim the excess edges. Refrigerate for 15 minutes. Preheat the oven to 355°F.

Step 3

Lightly beat the eggs and yolk, add the cream, zest, and chopped green onions, season with salt, cover, and set aside.

Step 4

Prick the dough with a fork in several places. Cover with parchment paper, fill with beans or grains to prevent the dough from rising, and bake for 15 minutes. Remove the paper and grains. Place the chopped fish on the dough, sprinkle with chopped dill, and pour the egg mixture over it. Bake for 40 minutes until the salmon is cooked through.
