Quesadillas with Beans and Pumpkin, with Spicy Sauce

Ingredients

  • Onion ½ head
  • Tomatoes 2 pieces
  • Garlic 1 clove
  • Ground Chipotle Pepper 2 teaspoons
  • Butternut Squash 15 oz
  • Canned black beans 5 oz
  • Jalapeño pepper 1 piece
  • Cheddar cheese 0 oz
  • Chopped Cilantro to taste
  • Lime Juice 1 tablespoon
  • Lime ½ piece
  • Tortillas 4 pieces

Step-by-Step Guide

Step 1

Heat a skillet over high heat. Sauté the onion, tomatoes, and garlic in a dry skillet until charred on all sides, then transfer everything from the skillet to a food processor with the 'Chipotle', and blend until smooth, adding salt to taste.

Step 2

Place the pumpkin in a microwave-safe container, add a little water, cover with plastic wrap, and microwave for 10 minutes until soft. (Alternatively, steam until soft.)

Step 3

Mash with a fork and season with salt. Add the black beans and mash the mixture again with a fork, then add the jalapeño pepper, cheddar cheese, cilantro, and lime juice.

Step 4

Spread the mixture on 4 tortillas, covering half of each. Fold the tortillas in half and press down.

Step 5

Cook in a dry skillet over high heat until golden brown and the filling is heated through. Cut into 4 pieces and serve with sauce, a wedge of lime, and cilantro.
