
Pumpkin with Tomatoes and Adyghe Cheese

Description
Sugar will enhance the sweetness of the pumpkin and tomatoes, creating an interesting flavor when combined with spices. If this idea doesn't appeal to you, you can substitute sugar with salt.
Ingredients
- Pumpkin 5 oz
- Tomatoes 4 pieces
- Adyghe cheese 10 oz
- Ground coriander 1 teaspoon
- Turmeric ½ teaspoon
- Paprika ½ teaspoon
- Chopped Parsley to taste
- Sugar 3 teaspoons
- Nigella Seeds ½ teaspoon
Step-by-Step Guide
Step 1
In a heated skillet with oil, sauté the nigella seeds for 1 minute (if unavailable, skip this step), then add the ground coriander, turmeric, and paprika, stir, and add the diced pumpkin.
Step 2
When the pumpkin turns yellow and softens slightly, add the diced Adyghe cheese (or paneer if available) and sauté over high heat for 3-5 minutes, stirring.
Step 3
Blanch the tomatoes in boiling water, peel them, and cut into wedges.
Step 4
Add the tomatoes, parsley or cilantro, and sugar to the pumpkin and cheese mixture, and stir everything together. After a couple of minutes, when the tomatoes and herbs soften, remove from heat. Serve hot.
