Ingredients
- Pumpkin 25 oz
- Onion 1 piece
- Fresh Mushrooms 6 pieces
- Ground ancho chili pepper 2 pieces
- Mild Chili Spice 2 pieces
- Garlic 5 cloves
- Water 5 fl oz
- Turmeric 1 tablespoon
- Coconut Milk 10 fl oz
- Curry 1 tablespoon
- Grated Ginger Root 1 tablespoon
- Vegetable Oil 2 spoons
- Raisins 0 oz
Step-by-Step Guide
Step 1
Finely chop the pepper and garlic, then mix them with the spices, water, and coconut milk.
Step 2
Cut the pumpkin into cubes, the onion into thin rings, and the mushrooms into slices.
Step 3
In a large deep skillet, heat the vegetable oil.
Step 4
Sauté the pumpkin, mushrooms, and onion for a few minutes until the onion becomes translucent.
Step 5
Add the coconut mixture to the skillet and bring to a boil.
Step 6
Reduce the heat and continue cooking on low until the pumpkin is tender.
Step 7
If the liquid evaporates before the pumpkin is cooked, add half a cup of water.
Step 8
Three minutes before it's done, add a handful of raisins to the curry.
Step 9
Season the finished curry with salt, stir, remove from heat, cover, and let it sit for 3 minutes.
Step 10
Serve with white rice.
