Ingredients

  • Pumpkin 10 oz
  • Avocado 1 piece
  • Onion 1 piece
  • Carrot 1 piece
  • Orange Juice 5 fl oz
  • Ground Star Anise to taste

Step-by-Step Guide

Step 1

Cut the pumpkin into random pieces. Place on a baking sheet, add star anise and olive oil. Mix and put in an oven preheated to 180–390°F for 20 minutes. Then take the pumpkin out of the oven and set aside until step 3.

Step 2

Peel the avocado and set aside until step 4.

Step 3

Pour olive oil into a pot. Finely chop the onion and carrot. Sauté the onion and carrot for 5 minutes. Then add the pumpkin and pour in the orange juice. Add enough water to cover the vegetables. Cook for 15 minutes on low heat. Add salt and pepper.

Step 4

Add the avocado to the pumpkin. Blend the dish in a blender until smooth.
