Provencal Lamb Ribs

Ingredients

  • Rack of Lamb 15 oz
  • Garlic 2 heads
  • Rosemary 1 teaspoon
  • Olive Oil 3 tablespoons
  • Ground Cumin 2 teaspoons
  • Tomatoes 2 pieces
  • Shallot 2 pieces
  • Salad Potatoes 2 pieces
  • Water 2 tablespoons
  • Ground Black Pepper ½ teaspoon
  • Salt ½ teaspoon

Step-by-Step Guide

Step 1

Preheat the oven to 390°F.

Step 2

Crush the garlic with half a teaspoon of salt and half a teaspoon of pepper. Mix with the remaining spices and 1 tablespoon of olive oil.

Step 3

Cut the tomatoes in half, then place them cut side up in a greased baking dish, season with 1/3 of the garlic mixture, and bake for 30–40 minutes.

Step 4

In a skillet over low heat, heat 1 tablespoon of olive oil. Sear the seasoned meat on both sides for about 4–6 minutes. Transfer the meat to a cutting board and wipe the skillet clean of oil.

Step 5

Heat the remaining oil and sauté the sliced shallots and julienned potatoes, stirring occasionally. Pour in the water and add half of the remaining garlic mixture, then remove the skillet from the heat.

Step 6

Brush the meat with the remaining garlic mixture, then place it on top of the potatoes and bake in the oven for 20–25 minutes.

Step 7

Cover the meat lightly and let it rest for 5–10 minutes. Serve with the roasted tomatoes.
