
Provençal Fish with Vegetables

Ingredients
- Olive Oil 3 spoons
- Dry White Wine 2 spoons
- Garlic 1 clove
- Pitted olives 6 pieces
- Chopped Sage Leaves 1 tablespoon
- Ocean salt ½ spoons
- Dijon Mustard ½ spoons
- Ground Black Pepper ¼ spoons
- Blue Ling Fillet 15 oz
- Marinated cherries 10 pieces
- Chinese green beans 16 pieces
- Spanish onions ¼ heads
Step-by-Step Guide
Step 1
Preheat the oven to 430°F.
Step 2
In a bowl, combine olive oil, white wine, minced garlic, finely chopped olives, parsley, mustard, salt, and pepper.
Step 3
Take 2 sheets of foil and place half of the green beans on each, trimming the ends beforehand, along with halved cherry tomatoes.
Step 4
Place a piece of fish on top of the vegetables and drizzle with the prepared dressing. Add the sliced onions on top, cut into thin rings.
Step 5
Tightly wrap in foil and place on a baking sheet. Bake in the oven for 16 minutes.
Step 6
Carefully open the foil and transfer the fish and vegetables to serving plates. Drizzle with the juices that have collected. Sprinkle with sea salt and freshly ground black pepper, lightly drizzle with olive oil, and serve.
