Potatoes with Vegetables in the Microwave

Description
I make this in a round glass dish of 1.5L or 1.7L in the microwave at maximum power of 700W. You can experiment with the vegetable composition. For example, add fresh mushrooms instead of eggplant. The principle is simple - to cook the potatoes, do not overcook the other vegetables (so they remain slightly tender).
Ingredients
- Salad Potatoes 5 pieces
- Onion 1 piece
- Eggplants 10 oz
- Orange Bell Peppers ½ piece
- Potato 1 piece
- Garlic 3 cloves
- Herbes de Provence 1 teaspoon
- Salt 1 teaspoon
Step-by-Step Guide
Step 1
Prepare all the vegetables: wash and peel them.
Step 2
Cut the potatoes (I cut them in half, then slice into 4-5mm pieces) and place them in the glass dish. The potatoes will take up about half of the dish, maybe a little more - this is about five medium potatoes.
Step 3
Slightly drizzle the potatoes with boiled water (1-2 tablespoons), cover with a lid, and place in the microwave at maximum power. My power is 700W - I set it for 4-5 minutes. It is important to bring the potatoes to a semi-cooked state! (Some potatoes are denser and require more time; at higher microwave power, obviously, less time is needed to reach the semi-cooked stage).
Step 4
While the potatoes are cooking in the microwave, slice a small onion into half-rings and a small eggplant to match the size of the potatoes. I cut the garlic into strips.
Step 5
Sequentially add to the semi-cooked potatoes - onion, eggplant, garlic - distributing evenly. Add salt (no more than one teaspoon), add dried herbs, and gently mix the top layer with the eggplant. Place in the microwave for 3 minutes.
Step 6
During this time, slice half of the bell pepper and the tomato.
Step 7
Remove the vegetables from the microwave and mix. Top with the sliced pepper and tomato. And microwave for another 2 minutes.
Step 8
Finally, mix the entire pot of vegetables. Enjoy your meal!
