Description
According to the legend of Petrovskoye village in the Pskov region, this dish was beloved by Alexander Pushkin. His great-grandfather was one of the first true admirers of potatoes in Russia and planted them in all his estates, including Petrovskoye, which was granted to him by the state for his loyal service. Cracklings can be made not only from pork fat but also from duck and goose fat with skin. This is also authentic.
Ingredients
- Potato 0 lbs
- Pork fat 5 oz
- Onion 2 heads
- Dill 0 oz
- Salt to taste
- Ground Black Pepper to taste
Step-by-Step Guide
Step 1
Peel the potatoes and boil them until cooked under a lid on low heat in a small amount of salted water. Ideally, the potatoes should be cooked not on the stove, but in a traditional Russian oven or in the oven.
Step 2
Cut the pork fat into small cubes and fry until crispy. The cracklings should be crunchy on the outside while remaining tender and chewy on the inside. Remove the cracklings from the skillet and in the remaining fat, sauté the sliced onions until they reach a caramel-like softness.
Step 3
Sprinkle the boiled potatoes with cracklings, fried onions, chopped dill, and ground pepper.
