Take 10 large young potatoes without blemishes, of the same color, preferably pink, with thin skin. Wash them thoroughly and cut them in half lengthwise.
Step 2
Score the cut sides of the potatoes with a knife in a grid pattern or any other design you like. Rub with salt and place in a baking dish lined with parchment paper.
Step 3
Slice slightly frozen salted bacon with a pink hue into thin slices. It is best to bake the potatoes with lard that is not too fatty, with meat streaks and a milky aroma.
Step 4
Bake in the oven at 355°F until a crust forms and the bacon slices turn into crispy bits.
