Ingredients
- Salad Potatoes 4 pieces
- Onion 1 piece
- Pork Blood 5 oz
- Salt to taste
- Ground Black Pepper to taste
- Lamb Casings 1 piece
Step-by-Step Guide
Step 1
Peel and wash the potatoes (preferably a quick-cooking variety). Then cut them into very small pieces. To do this, cut the potato in half lengthwise, then cut each half in half again, then into sticks, and finally cut across into pieces.
Step 2
Peel, wash, and finely chop the onion. Cut the meat into small pieces. In a deep bowl, combine the potatoes, meat, and onion. Add salt, pepper, and mix well.
Step 3
Prepare the casing by placing it like a stocking on a sausage stuffing tube (I use a pastry bag instead of a tube). Tie the end in a knot.
Step 4
Stuff the casing with the potato filling. Tie the other end of the resulting sausage tightly with string. Use a thin needle to make neat holes all over the sausage.
Step 5
Place the sausage in a pot and cover with water. Bring to a boil and simmer on low heat for 20 minutes.
Step 6
Carefully remove the sausage and place it in a suitable oven dish, drizzle with a little sunflower oil, and bake in a preheated oven at 355°F for 40–50 minutes or until golden brown.
