Step-by-Step Guide
Step 1
Grate the peeled boiled potatoes, add cornstarch, salt, and pepper. Shape the mixture into pancakes and fry in a skillet.
Step 2
Separately, sauté the peeled and finely chopped shallot onion until golden, then add the oyster mushrooms and fry together. Add chopped parsley and dill, and mix.
Step 3
On a plate, place the potato pancakes, top with the oyster mushrooms, and garnish with vegan sour cream and green onions.
