  • Potatoes 2 pieces
  • Green onions 0 oz
  • Chopped Parsley 4 teaspoons
  • Chopped Tarragon Leaves 4 teaspoons
  • Olive Oil 2 teaspoons

Step-by-Step Guide

Step 1

Squeeze the potatoes to remove as much liquid as possible, place them in a bowl, add the herbs, and mix. Season with salt and pepper if desired.

Step 2

Take a 23 cm diameter frying pan, heat the olive oil over medium heat.

Step 3

Spread the potato mixture in the pan, pressing it down, and cook for 10 minutes, or until the bottom of the pancake is golden brown.

Step 4

Use a spatula to separate the edges and bottom of the pancake from the pan and transfer it to a plate.

Step 5

Heat the remaining oil, place the pancake back in the pan with the browned side up, and cook for another 10-15 minutes.

Step 6

Transfer the finished pancake to a plate, cut into pieces, and serve warm.
