
Potato Fritters with Herbs

Ingredients
- Scallions 0 oz
- Salad Potatoes 4 pieces
- Lemon 1 piece
- Olive Oil 1 teaspoon
- Parsley 0 oz
- Garlic 1 clove
Step-by-Step Guide
Step 1
Boil the potatoes until tender, peel, and mash them until smooth. Season with salt to taste. Chop the parsley and green onion.
Step 2
Add the zest of one lemon and olive oil to the herbs. Mince the garlic and add it as well. Season lightly with salt.
Step 3
Heat the oil well in a skillet. Shape a ball from the potato mash, make a dent in it, and place about one teaspoon of the herb filling inside; you can also mix the filling with the mash initially. Flatten with your fingers to form a thick patty. Chill the potato fritters in the refrigerator for 20 minutes. Then fry in the skillet for 3-4 minutes on each side.
