Boil the peeled potatoes, drain the water, and let the potatoes dry for about ten minutes. Without letting the potatoes cool, mash them with a wooden pestle.
Step 2
Add a tablespoon of oil, the egg yolks to the mashed potatoes, mix thoroughly, and shape into cutlets. When shaping, coat the cutlets in flour or breadcrumbs, and then fry on both sides in oil. Serve the mushroom sauce separately with the cutlets.
