Potato and Brussels sprout patties with tomato sauce
Ingredients
- Salad Potatoes 20 oz
- Brussels Sprouts 5 oz
- Chicken Egg 1 piece
- Salt to taste
- Ground Black Pepper to taste
- Breadcrumbs to taste
- Butter to taste
- Olive Oil 1 tablespoon
- Spanish onions 1 head
- Garlic 2 cloves
- Oregano to taste
- Baking Tomatoes 10 oz
Step-by-Step Guide
Step 1
Peel the potatoes and boil them with the Brussels sprouts until tender. Mash the potatoes using a potato masher. Crush the Brussels sprouts. Add the egg, season with salt and pepper. Form 12 balls from the mixture using floured hands. Roll in breadcrumbs and flatten into disks with a diameter of 6 cm and a thickness of 2 cm. Refrigerate.
Step 2
Meanwhile, prepare the sauce by sautéing the onion and garlic in olive oil until soft, about 5 minutes. Add the tomatoes, oregano, season with salt and pepper. Bring to a boil and cook for 5 minutes. Keep the sauce warm.
Step 3
Fry the patties in butter on both sides until golden brown. Serve with the sauce.
