Pork with Narsharab Sauce

Ingredients

  • Pork Skewers 4 pieces
  • Garlic 2 cloves
  • Thyme 1 bunch
  • Olive Oil 3 tablespoons
  • Spanish onions 1 head
  • Tomatoes 6 pieces
  • Red Grape Juice ½ cup
  • Narshehab sauce 3 tablespoons
  • Salt to taste
  • Green peppercorns to taste

Step-by-Step Guide

Step 1

Crush the black peppercorns in a mortar, add salt and thyme. Crush everything together again, then add the minced garlic, narsharab sauce, and olive oil. Rub the mixture onto the pieces of meat and let marinate for 20–30 minutes, or preferably about an hour.

Step 2

Sear the marinated meat. While the meat is frying, prepare the sauce.

Step 3

For this, finely chop the onion and sauté it in a small amount of vegetable oil. Add the peeled and chopped tomatoes along with the juice released during chopping.

Step 4

Once the tomatoes are lightly sautéed with the onion, add the narsharab sauce and wine. Keep the sauce on the heat, stirring occasionally, until it thickens. Just before finishing cooking, season the sauce with salt and pepper to taste.

Step 5

Serve the meat drizzled with the prepared sauce.
