Ingredients

  • Pickled Chanterelles 20 oz
  • Pork Blood 20 oz
  • Onion 1 head
  • Garlic 1 clove
  • Wheat Flour 2 tablespoons
  • Vegetable Oil 2 tablespoons
  • Salt to taste
  • Ground Black Pepper to taste
  • Chicken Broth 5 fl oz
  • Red Grape Juice 5 fl oz

Step-by-Step Guide

Step 1

Peel and finely chop the onion. Peel the garlic, chop it or press it through a garlic press. Clean the champignon mushrooms with a damp cloth and slice them thinly. Wash the meat, pat it dry, cut it into slices about 1 cm thick, cover with plastic wrap, and lightly pound. Dredge in flour. Heat vegetable oil in a skillet and lightly fry the meat on all sides. Remove from the skillet, season with salt and pepper. In the same skillet, sauté the onion with garlic, add the mushrooms, and fry while stirring constantly for 5 minutes. Pour in the wine, let it simmer for a bit, then add the broth.

Step 2

Return the meat to the skillet, cover with a lid, and simmer on low heat for 10 minutes, turning the meat after 5 minutes. Season the sauce with salt and ground black pepper. You can serve pasta or potatoes as a side dish.
