Ingredients

  • Pork Blood 15 oz
  • Onion 1 head
  • Salt to taste
  • Cucumbers 6 pieces
  • Ground Black Pepper to taste
  • Turnips 2 pieces
  • Bay leaf 0 oz
  • Courgette 1 piece

Step-by-Step Guide

Step 1

Trim the fat from the pork, divide the meat into two portions, and season with pepper.

Step 2

Grind the onion through a meat grinder, or better, puree it in a food processor. Slice the cucumbers, zucchini, and carrots into rounds.

Step 3

Layer the ingredients in a not very deep pot or skillet with high sides, starting with cucumbers, then carrots. Place the meat on top of the carrot layer, followed by the onion. Top with zucchini and a second layer of cucumbers. Pour in salted boiling water until it slightly covers the top layer of cucumbers.

Step 4

Place the pot over high heat, bring to a boil, and continue cooking the meat until done (about 10 minutes). Once the meat is tender, remove the pot from heat and let the pork rest for 20 minutes.

Step 5

Serve the meat with vegetables on plates, accompanied by Greek yogurt.
