Pork with Caramelized Potatoes and Blood Oranges

Description

You will need a skillet with a lid, or better yet, 2 small baking sheets. Everything came together during the cooking process. Very quick and very tasty!

Ingredients

  • Salad Potatoes 4 pieces
  • Onion 1 piece
  • Oranges 1 piece
  • Basil 1 stem
  • Sugar 3 teaspoons
  • Cotton Oil 5 fl oz
  • Garlic 3 cloves
  • Meyer Lemon Juice 3 teaspoons
  • Herbs 2 stems
  • Salt to taste
  • Pork Skewers 2 pieces

Step-by-Step Guide

Step 1

Peel the potatoes (medium-sized), cut them into about 4 pieces, or more if desired.

Step 2

Slice the blood orange into rings and then cut into 4 pieces.

Step 3

Heat the skillet with oil, add the oranges first (I cooked on quite a high heat).

Step 4

Mix 2 teaspoons of sugar with 2 teaspoons of water and pour this over the oranges in the skillet.

Step 5

Add the potatoes to the oranges, stir, and fry for about 3 minutes, then transfer the potatoes and oranges to a baking sheet with oil, add 3 unpeeled cloves of garlic (preferably young), and place in an oven preheated to 390°F (this skillet will be needed later).

Step 6

Place another baking sheet with oil directly on the burner (I have an electric stove) at medium heat. Meanwhile, make shallow cuts (3-4) on each side of the pork steaks (I used pork neck) with the tip of a knife, placing half a basil leaf in each cut. Place the meat on the hot baking sheet and sear on both sides until a nice golden crust forms... Then sprinkle a little zest from the remaining orange on the meat and place the baking sheet in the oven with the potatoes. Bake for about 10 minutes; the meat should be juicy.

Step 7

When the potatoes start to turn golden, check for doneness. They should still be slightly undercooked inside (about 15 minutes). Transfer the potatoes with the oranges and garlic, and most importantly — with the oil and released juices — to the skillet, sprinkle with a little salt, stir, and leave on medium heat with the lid closed. Fry for about 5-10 minutes, no longer (the potatoes will become crispy on the outside and soft on the inside). A couple of minutes before they are done, sprinkle the potatoes evenly with a teaspoon of sugar.

Step 8

In a bowl, make a base with half of the onion. Pour the juice from the potatoes over it and place the potatoes, oranges, and garlic on top. Sprinkle with herbs. Place the steaks on separate plates, mix the remaining juices from the meat with a teaspoon of orange juice and 2-3 teaspoons of lemon juice. Salt to taste. This sauce is poured over the steaks.
