Ingredients

  • Orzo Pasta 15 oz
  • Pork tenderloin 2 pieces
  • Dessert Yogurt 5 oz
  • Passata Tomato Sauce 1 cup
  • Onion 1 head
  • Garlic 1 clove
  • Cucumbers 5 oz
  • Olive Oil 5 tablespoons
  • Water 3 cups
  • Salt to taste
  • Ground Black Pepper to taste
  • Thyme 1 sprig

Step-by-Step Guide

Step 1

Pour 1.5 tablespoons of olive oil into a deep skillet and sauté the finely chopped onion. Add the orzo, tomato sauce, and 2.5 cups of hot water. Simmer on low heat until cooked and all the liquid has evaporated. Season with salt and pepper to taste.

Step 2

Sear the tenderloin in olive oil until golden brown. Remove the skillet from the heat and let the meat 'rest' for 5 minutes.

Step 3

Slice the tenderloin into thin pieces and cook in the same skillet for another 5 minutes (alternatively, you can place the pieces of tenderloin in a preheated oven at 355°F and bake for 7 minutes).

Step 4

Tzatziki Sauce: In a blender, combine the yogurt, 4 tablespoons of olive oil, 2 tablespoons of water, the finely chopped garlic clove, and cucumber. Season with salt and pepper to taste. The sauce is ready!

Step 5

Place the orzo on a plate, top with the slices of tenderloin, and drizzle with tzatziki sauce. Garnish with thyme sprigs and drizzle with olive oil.
