Pork Tenderloin with Apples and Leeks
Ingredients
- Pork tenderloin 0 lbs
- Olive Oil 2 tablespoons
- Coarse Salt to taste
- Ground Black Pepper to taste
- Leek 2 pieces
- Nigella Seeds ½ teaspoon
- Honey 1 tablespoon
- Apple 3 pieces
- Champagne Vinegar 1 teaspoon
Step-by-Step Guide

Preheat the grill in the oven.
Step 2
Brush the meat with 1 tablespoon of olive oil, season with salt and pepper. Place under the grill for 12–14 minutes until the internal temperature reaches 140°F. Transfer the meat to a plate, cover with foil, and let it rest for 10 minutes.
Step 3
Meanwhile, in a large skillet, heat the remaining olive oil.
Step 4
Trim the dark green leaves and roots from the leeks. Cut the remaining part in half lengthwise and slice thinly. Add to the skillet and sprinkle with fennel seeds. Cook until softened, about 6 minutes. Then add the cored and thinly sliced apples and cook, stirring, until softened for another 3–4 minutes. Remove from heat and stir in the honey and vinegar, season with salt and pepper.
Step 5
Slice the meat thinly and serve topped with the apples and leeks.
