Ingredients
- Pork tenderloin 0 lbs
- Onion 1 head
- Meyer Lemon Juice 2 tablespoons
- Grated Lemon Zest 1 teaspoon
- Garlic 2 cloves
- Saffron a pinch
- Bay leaf 1 piece
- Vegetable Oil 5 fl oz

Prepare the necessary ingredients.
Step 2
Wash the meat thoroughly under running water, pat it dry, and cut it into portion-sized pieces.
Step 3
Pour 75 ml of vegetable oil into the skillet.
Step 4
Place the cut meat into the skillet. Put the skillet with the meat on the heat. Fry the meat over medium heat with the lid off.
Step 5
Turn the meat to the other side and continue frying over medium heat with the lid off until golden brown, stirring occasionally.
Step 6
Peel the onion, wash it well, cut it into small cubes or strips, and add it to the skillet with the meat.
Step 7
In a separate container, grate the zest of half a lemon and squeeze out 2 tablespoons of lemon juice.
Step 8
Peel the garlic, wash it, and press it through a garlic press into the container with the lemon juice.
Step 9
Add a pinch of saffron to the container with lemon juice and garlic. Mix all the ingredients.
Step 10
Pour the prepared sauce into the skillet with the meat and onion, add 1 bay leaf, season the meat with salt to taste, stir slightly, cover with a lid, and simmer over low heat for about 5–7 minutes.

Serve hot or warm.
