Pork skewers with red peppers and pineapple rice
Ingredients
- Long-Grain Rice 1 cup
- Honey 3 tablespoons
- Vegetable Oil 1 tablespoon
- Canned Pineapple Chunks 10 oz
- Coarse Salt to taste
- Ground Black Pepper to taste
- Pork tenderloin 20 oz
- Orange Bell Peppers 2 pieces
- Lime 1 piece
- Grated Ginger Root 1 teaspoon
- Green onion tops 2 pieces
Step-by-Step Guide
Step 1
Preheat the grill or barbecue.
Step 2
Meanwhile, cook the rice in boiling water until done. Drain.
Step 3
In a bowl, mix honey, 2 tablespoons of pineapple juice, and season lightly with salt and pepper.
Step 4
Cut the meat and peppers into small pieces and thread them alternately onto skewers. Season with salt and pepper and place on the grill. Grill until cooked, about 10–15 minutes, brushing with the honey syrup.
Step 5
Meanwhile, add the pineapple chunks, finely chopped green onions, ginger, and vegetable oil to the cooked rice. Mix well. Season with salt and pepper.
Step 6
Serve the skewers alongside the pineapple rice.
