Pork Skewers with Pineapple
Ingredients
- Mild Chili Spice 1 piece
- Pineapple 1½ pieces
- Champagne Vinegar ½ cup
- Garlic 2 cloves
- Vegetable Oil 2 tablespoons
- Oregano 1 teaspoon
- Salt 1½ teaspoons
- Onion 4 heads
- Pork Blood 30 oz
Step-by-Step Guide
Step 1
Heat a small heavy-bottomed skillet over medium heat and add 1 dried chili pepper for 30 seconds. Turn the pepper several times, and when it becomes soft and changes color, remove it with tongs.
Step 2
Place the chili pepper in a blender and grind it together with small pieces of fresh pineapple (1 cup) and crushed garlic. Then add vinegar, oil, oregano, and salt. Blend everything until it forms a smooth puree and transfer it to a bowl.
Step 3
Preheat the grill to moderately high temperature.
Step 4
Marinate the pork, cut into pieces for skewers, in the prepared pineapple puree sauce for 10 minutes. Then thread the meat onto skewers, alternating pieces of pork with slices of onion and diced fresh pineapple (4 cm).
Step 5
Place the skewers on the grill rack and cook for 8-10 minutes, occasionally basting the meat with the pineapple sauce.
Step 6
Remove the meat, onion, and pieces of pineapple from the skewers and serve with warm tortillas and salsa.
