Pork skewers with apples and red onion
Ingredients
- Apple Cider Vinegar 2 tablespoons
- Apricot Jam ½ cup
- Olive Oil 2 tablespoons
- Passata Tomato Sauce 1 tablespoon
- Coarse Salt to taste
- Ground Black Pepper to taste
- Pork tenderloin 25 oz
- Green Apples 1 piece
- Spanish onions 1 head
Step-by-Step Guide
Step 1
Cut the meat into small pieces. Peel the onion and cut it into 8 segments. Core the apple and cut it into 8 segments.
Step 2
Preheat the grill or barbecue.
Step 3
For the sauce, mix the apricot jam, vinegar, tomato paste, and 1 tablespoon of olive oil in a bowl. Season with salt and pepper.
Step 4
On skewers, alternate pieces of meat, apple, and onion. Brush with the remaining olive oil. Season with salt and pepper.
Step 5
Place the skewers on the grill and cook for 6–8 minutes. Then brush with the sauce and grill for another 4–6 minutes until cooked through.
