Pork Rolls with Mushrooms

Ingredients

  • Salt to taste
  • Pickled Chanterelles 15 oz
  • Pork tenderloin 20 oz
  • Onion 2 heads
  • Chocolate eggs 2 pieces
  • 10% cream 1 cup
  • Melted Cheese 10 oz
  • Ground Black Pepper to taste
  • Vegetable Oil 3 tablespoons

Step-by-Step Guide

Step 1

Heat 2–3 tablespoons of vegetable oil in a skillet over medium heat. Peel the onion and cut it into thin quarter rings. Sauté in the skillet until golden brown (about 10 minutes), stirring occasionally.

Step 2

Wash, clean, and chop the champignon mushrooms into small pieces, add them to the skillet with the onion, and cook for another 10–15 minutes, stirring occasionally.

Step 3

Transfer the cooked mushrooms to a bowl, add chopped eggs and grated cheese. Mix everything well, season with salt and ground pepper to taste.

Step 4

Slice the pork across the grain into pieces about 7–8 mm thick. Season the pork with salt and pepper on both sides and pound it with a meat mallet until the pieces are thin and large enough to wrap the filling.

Step 5

Place about 2 tablespoons of filling on each piece of pork and roll the pork into a roll. Secure with toothpicks or tie with string.

Step 6

Heat a large skillet with oil over medium heat. Sear the pork rolls on all sides, starting with the seam side. After searing the seam, you can remove the toothpicks (if you used string, it can be removed later).

Step 7

Place the seared rolls in a baking dish (if you used string, remove it). Pour about 1.5 cups of water and cream into the dish. Season with black pepper and salt and place in a preheated oven at 375°F.

Step 8

Bake for 30 minutes or until golden brown. Serve warm.
