Pork Roll with Vegetables

Ingredients

  • Leek ½ piece
  • Pork Blood 30 oz
  • Carrot 1 piece
  • Pickled Chanterelles 10 oz
  • Dry White Wine 5 fl oz
  • Chopped almonds 2 tablespoons
  • Olive Oil 3 tablespoons
  • Salt to taste
  • Ground Black Pepper to taste
  • Water 5 fl oz
  • Onion 2 heads

Step-by-Step Guide

Step 1

Chop the leek and sauté it with water for 10 minutes.

Step 2

Sauté the mushrooms and onion in olive oil.

Step 3

Puree half of the mushrooms and all of the leek with salt in a blender. Sauté the resulting mixture with walnuts for a bit.

Step 4

Cut the meat into pieces 2-3 cm thick (do not cut all the way through!).

Step 5

Place the vegetable mixture on each piece. Sprinkle with pepper to taste.

Step 6

Tie the meat tightly with kitchen twine.

Step 7

Pour white wine into the tray with the meat and add sliced carrot and the remaining mushrooms.

Step 8

Bake in the oven at 180°C for 45-60 minutes.

Step 9

If desired, the sauce made from wine and carrots can be pureed and served with the meat.
