Description
You can substitute pork ribs for beef ribs.
Ingredients
- Pork Skewers 5 lbs
- Garlic 7 cloves
- Sugar 1 tablespoon
- Paprika 1 tablespoon
- Salt 2 teaspoons
- Ground Black Pepper 2 teaspoons
- Mild Chili Spice 2 teaspoons
- Black Cumin (Cumin) 2 teaspoons
- Brown Sugar ½ cup
- Apple Cider Vinegar ½ cup
- Ketchup ½ cup
- Chili jam 0 fl oz
- Meyer Lemon Juice 1 tablespoon
- Onion ½ piece
- English Dry Mustard ½ teaspoon
- Worcestershire Sauce 0 fl oz
Step-by-Step Guide
Step 1
Preheat the oven to 300°F. Place the ribs on a baking rack. Top with sliced garlic, 6 cloves, or more if desired. Cover with foil. Place the rack over a baking tray. Bake for 2.5 hours.
Step 2
In a bowl, mix white sugar, paprika, salt, black pepper, chili powder, and cumin. Sprinkle the cooled ribs on one side with the mixture. Wrap the ribs in foil and leave in the refrigerator overnight.
Step 3
In a small saucepan, combine brown sugar, apple cider vinegar, ketchup, chili sauce, Worcestershire sauce, lemon juice, finely chopped onion, and 1 clove of garlic. Simmer uncovered on low heat for 1 hour. A small portion of the sauce will be used to glaze the ribs, and the remaining sauce will be served during the meal.
Step 4
Preheat the grill to medium heat. Alternatively, you can grill the ribs over an open flame.
Step 5
Brush the ribs with the sauce and grill for about 12 minutes until a nice brown glaze forms.
Step 6
Serve with the remaining sauce.
