Pork ribs in tomato marinade

Ingredients

  • Pork Skewers 30 oz
  • Water 6 cups
  • Passata Tomato Sauce 3½ tablespoons
  • Onion 1 piece
  • Garlic 3 cloves
  • Meyer Lemon Juice 1 tablespoon
  • Honey 10 oz
  • Mustard Greens 0.3 tablespoons
  • Vinegar essence 1 tablespoon
  • Salt 1 teaspoon
  • Green peppercorns to taste
  • Ground clove to taste

Step-by-Step Guide

Step 1

Combine water, tomato paste, chopped onion, chopped garlic, lemon juice, pepper, and cloves. Bring to a boil over medium heat for about 10 minutes.

Step 2

Then immerse the ribs in the marinade so that the liquid completely covers them, and cook for 1 hour. Remove from the pot and let cool.

Step 3

Mix half a cup of marinade, salt, honey, mustard, and vinegar. Bring to a boil and simmer for 5–7 minutes. Then brush the ribs on both sides with the resulting sauce and place on a baking sheet covered with foil. Bake in the oven for 5–7 minutes at 465°F on one side. Then flip to the other side, brush with sauce, and bake for another 5–7 minutes.
