Pork Ribs in Citrus Marinade

Ingredients

  • Lime 2 pieces
  • Oranges 2 pieces
  • Balsamic Vinegar 1½ tablespoons
  • Garlic 3 cloves
  • Dijon Mustard 1 tablespoon
  • Thyme 3 sprigs
  • Salt ½ teaspoon
  • Ground Black Pepper 1 teaspoon
  • Pork Skewers 4 pieces
  • Olive Oil 1½ tablespoons
  • Butter 1 tablespoon

Step-by-Step Guide

Step 1

Juice the limes and oranges. Pour into a bowl.

Step 2

Add the vinegar, mustard, minced garlic, finely chopped thyme, salt, pepper, and 1 tablespoon of olive oil.

Step 3

Place the ribs in the marinade (pieces should be about 15x15 cm and 3 cm thick), cover, and let sit for 30 minutes.

Step 4

Meanwhile, preheat the grill or barbecue.

Step 5

Brush the ribs with the remaining olive oil and grill, basting with the marinade, for about 10–15 minutes until cooked through.

Step 6

While the ribs are grilling, pour the marinade into a saucepan and place over medium heat. Cook for a while until the sauce thickens. Remove from heat and stir in the softened butter.

Step 7

Serve the ribs drizzled with the sauce.
