Ingredients
- Pork Skewers 10 lbs
- Semi-Smoked Sausage 5 oz
- Garlic 5 cloves
- Citrus Zest Mix 1 piece
- Rosemary 0 oz
- Thyme 0 oz
- Olive Oil 5 fl oz
- Ground Black Pepper 1 teaspoon
- Dry White Wine 5 fl oz
- Salt to taste
- Water 0 fl oz
Step-by-Step Guide
Step 1
Rinse 4 kg of pork (or goat) ribs, pat dry, and season with salt and pepper to taste.
Step 2
Finely chop 200 g of smoked bacon, 5 cloves of garlic, the zest of 1 lemon, and the herbs (30 g each of rosemary and thyme), add 100 ml of olive oil and 1 teaspoon of black pepper, and mix the sauce.
Step 3
Place the ribs in a baking dish, pour the sauce over them along with 150 ml of dry white wine, and bake in a preheated oven at 140°C for 1.5 hours.
Step 4
Then turn the ribs over, pour in 50 ml of water, and continue baking for another 10 minutes.
