Step-by-Step Guide
Step 1
Pat the pork neck dry, then rub it with salt, pepper, and coriander. Place it in the refrigerator for 1-2 hours. If you're short on time, you can start roasting it immediately.
Step 2
Transfer the meat to a baking tray and place it in an oven preheated to 210°F. Roast for about 3 hours, until the internal temperature of the meat reaches 140°F.
Step 3
When the meat reaches 140°F, increase the oven temperature to 430°F and roast for another 10-15 minutes, until the meat is covered with a golden crust. The internal temperature of the meat should reach 63 degrees, which means it is cooked and not dried out.
Step 4
Remove the cooked neck from the oven and let it rest for a little while before serving. 15 minutes should be sufficient.
