Step-by-Step Guide

Step 1

Cut the pork into two pieces, pound them to form a cylinder shape. Season with salt and pepper. Wrap the tenderloin in strips of bacon. To secure the bacon, pierce the loose end with rosemary.

Step 2

Sear the medallions in vegetable oil in a skillet.

Step 3

Finely chop the onion and sauté it in butter, then add the wine. Reduce the sauce to medium thickness. Add the cream and remove from heat after it boils. Use a blender to puree the mixture until smooth.
