Pork Meatballs with Noodle Salad
Ingredients
- Sugar 1 tablespoon
- Water 1 tablespoon
- Shallot 20 oz
- Pork Mince 0 lbs
- Fish Oil 5 tablespoons
- Ground Black Pepper 1 teaspoon
- Rice Vinegar for Sushi 2 tablespoons
- Brown Sugar 1 teaspoon
- Garlic 1 clove
- Mild Chili Spice 1 piece
- Green Papaya 0 oz
- Rice Noodles 20 oz
- Romaine lettuce 1 piece
- Herb Bouquet to taste
Step-by-Step Guide
Step 1
Prepare the meatball mixture. In a small saucepan, combine 2 tablespoons of sugar and 3 tablespoons of water and cook over high heat until dark brown caramel forms. Remove from heat and add 2 tablespoons of cold water. Stir.
Step 2
In a large bowl, mix the pork, finely chopped shallots, 3 tablespoons of fish sauce, caramel, and pepper. Refrigerate the mixture for 1.5 hours.
Step 3
Prepare the sauce. Combine the remaining fish sauce, vinegar, sugar, water, minced garlic, chili, and chopped green papaya. Set aside.
Step 4
Cook the noodles according to the package instructions. Drain and rinse the cooked noodles under cold water.
Step 5
Remove the meat mixture from the refrigerator and shape into 15-20 meatballs. Preheat the grill or oven. Grill/bake the meatballs for 4 minutes on each side.
Step 6
Pour the sauce into 4 plates, place the meatballs in the sauce. Shred the lettuce, mix with the herb mix, and distribute onto the plates.
Step 7
Serve the cooked noodles in a separate dish. Dip the noodles in the sauce and enjoy with the meatballs and salad. Bon Appétit!
