Pork marinated in apple cider vinegar with grilled apples
Ingredients
- Apple Cider Vinegar 10 fl oz
- Coarse Salt 0 oz
- Dried Rosemary 1 tablespoon
- Chopped Sage Leaves 1 tablespoon
- Dried Chamomile 1½ teaspoons
- Green peppercorns ½ teaspoon
- Pork tenderloin 4 pieces
- Olive Oil to taste
- Fruit Jelly 6 tablespoons
- Butter 2 tablespoons
- Calvados 2 tablespoons
- Green Apples 4 pieces
Step-by-Step Guide
Step 1
In a bowl, mix apple cider vinegar, salt, rosemary, sage, thyme, and black pepper. Stir well and pour into a bag. Add the meat and seal tightly. Mix and let marinate for 1.5 to 2 hours, turning the bag every 30 minutes.
Step 2
Rinse the meat under cold water and pat dry with a paper towel. Lightly coat the meat with olive oil and let it sit for 20-30 minutes while the grill heats up.
Step 3
Preheat the grill. In a small metal bowl, melt the butter and jelly. Add the Calvados. Divide in half and brush half onto the meat.
Step 4
Place the meat on the oiled grill and cook for about 10 minutes for medium doneness, turning occasionally. Transfer to a plate and let rest for 3-5 minutes.
Step 5
Meanwhile, cut the apples into 6 wedges and remove the cores. Place on the grill and cook for 2 minutes, flipping once.
Step 6
Serve the meat warm with the grilled apples and the remaining sauce.
