Pork Loin in Ginger Marinade
Ingredients
- Lime 2 pieces
- Mild Chili Spice 1 piece
- Parsley 0 oz
- Garlic 6 cloves
- Grated Ginger Root 2 tablespoons
- Olive Oil 5 fl oz
- Salt 1 teaspoon
- Ground Black Pepper a pinch
- Pork tenderloin 25 oz
Step-by-Step Guide
Step 1
Zest the limes, chop the parsley, and slice the garlic thinly.
Step 2
Grate the ginger root.
Step 3
Cut the chili pepper in half lengthwise and slice it crosswise. You can leave the seeds in the marinade if you prefer it spicier.
Step 4
Combine the zest, garlic, ginger, parsley, and chili in a mortar and grind them into a paste.
Step 5
Then squeeze the lime juice into the mixture, add olive oil, salt, black pepper, and mix well. The marinade is ready.
Step 6
Cut the pork loin into 4 chops on the bone. Rub the marinade onto the chops and place them in a container to marinate for about 40–45 minutes. It’s best to cover the container with plastic wrap.
Step 7
Heat a bit of vegetable oil in a heavy skillet over medium-high heat.
Step 8
Remove large pieces of marinade from the chops to prevent burning, and fry them on both sides until golden brown, about 2 minutes on each side.
Step 9
Place the meat in a baking dish. Drizzle with the remaining marinade and bake in the oven until cooked through, about 20 minutes.
