  • Smoked pork knuckle 2 pieces
  • Potato 8 pieces
  • Onion 1 head
  • Dark Ale 0 qt
  • Garlic 1 clove
  • Adjika 1 tablespoon
  • Herbs to taste
  • Salt to taste
  • Mustard Greens 2 spoons

Step-by-Step Guide

Step 1

Wash the shanks and clean the skin (do not remove it).

Step 2

Marinate the pork hocks in a large pot with beer, salt, and adjika in advance (I let them sit for a day in a cool place).

Step 3

Add water to the marinade (enough to cover the shanks), along with onion and garlic, and simmer over medium heat for 2.5 hours.

Step 4

Let it cool without removing from the broth, so that they retain their juices during further cooking.

Step 5

Remove the shanks from the marinade and place them on a baking tray, then brush with mustard. (Do not discard the marinade).

Step 6

In the marinade, boil the pre-peeled potatoes until partially cooked, then place them on a baking sheet.

Step 7

Bake in the oven at 390°F, frequently basting with the remaining broth.

Step 8

Serve with herbs and mustard.
