Ingredients

  • Pork Blood 0 lbs
  • Pickled Chanterelles 6 pieces
  • 50% Fat 'Lambert' Cheese 0 oz
  • Egg white 2 pieces
  • Olive Oil 5 fl oz
  • Meyer Lemon Juice 1 tablespoon
  • Salt to taste
  • Dill to taste
  • Lemon-Pepper Mix to taste

Step-by-Step Guide

Step 1

Salt the mushrooms and fry them until golden brown for about 10 minutes, then let them cool.

Step 2

Whisk the yolks, salt, pepper, and half of the lemon juice, gradually adding the olive oil (everything should be at room temperature). If it becomes too thick, you can add water.

Step 3

Transfer to a blender, add the mushrooms, grated cheese, dill, and the remaining lemon juice, and blend everything well. The sauce is ready.

Step 4

Cut the meat across the grain, pound it on both sides, season with salt and pepper, and fry on both sides until golden brown.

Step 5

Place the hot meat on plates, top with sauce, and sprinkle with herbs.
