Pork in Lingonberry Sauce
Ingredients
- Pork Blood 5 lbs
- Linden Honey 2 tablespoons
- Ground Cinnamon ½ teaspoon
- Paprika ½ teaspoon
- Grated Ginger Root 0 oz
- Lingonberry 20 oz
- Red Grape Juice 5 fl oz
- Rosé Dry Wine 10 fl oz
- Sugar ½ cup
- Salt to taste
Step-by-Step Guide
Step 1
In a medium bowl, thoroughly mix the dry rosé wine and honey. Grate the ginger on a fine grater. Add cinnamon, paprika, ginger, and salt to the wine and honey mixture.
Step 2
Apply the mixture to the pork on all sides. Place the meat on a rack set over a baking sheet. Put it in an oven preheated to 220°C (428°F), after 10 minutes reduce the temperature to 160°C (320°F), cover with foil, and bake for 2.5 hours. A few minutes before it's done, remove the foil to brown the meat.
Step 3
Remove from the oven and cover with foil for 15 minutes.
Step 4
Drain the juices from the baking sheet into a small saucepan, add the red dry wine, and heat over medium heat for 5-10 minutes. While it heats, blend half of the lingonberries with sugar. Add the resulting puree and whole lingonberries to the sauce, stir, and remove from heat.
Step 5
Slice the meat and drizzle with the sauce. It can be served immediately.
